Direction:

You will be required to break 2 eggs in a cold pan, and set in on the lowest heat. Add a half butter in it. Using a spatula, stir the mixture frequently to combine the yolk and the white.

As the mixture sits, add the remaining butter. It will take 4 or 5 minutes for the egg to scramble – the output should be soft and quite lumpy.

Be careful not to let them get too hot. Keep the pan moving while stirring it in one direction and back on the heat as the bottom of the pan remains its hotness even after taking it off the stove.

Now, toast a bread. Ramsay uses sourdough bread.

Add crème fraîche and season the eggs at the last minute, then add the finely chopped chives. Put the toasted bread on a plate, pile the softly scrambled eggs on top and its ready to be serve.
