These following salad recipes can help you to manage diabetes.
Spinach salad with garlic vinaigrette
Ingredients
- 6 cups of baby spinach leaves (around 6 ounces)
- 2 minced garlic cloves
- ½ tsp Dijon mustard
- 1 tbsp. white wine vinegar
- ¼ tsp ground black pepper
- 1/8 tsp salt
- ¼ cup sliced red onion
- 1 ½ tbsp. extra-virgin olive oil
Procedure
Place all the ingredients in a large dish except baby spinach leaves and red onion cuts. Mix the ingredients well with a whisk together with the spinach leaves and red onion cuts.
Endive and Cucumber Salad
Ingredients
- 200 g cucumbers
- Olive oil
- 90 g endives
- Olive oil
- 10 g black olives
- Vinegar
- Salt
Procedure
Wash the endives and cucumber. Peel and slice cucumber into circles and mix all the ingredients in a dish and season with vinegar, salt, and oil.
Cucumber Salad
Ingredients
- 1 big English cucumber (or 2 medium cucumbers)
- 1 tsp stevia
- 2 tbsp. toasted sesame seeds
- ¼ cup rice vinegar
- ¼ tsp salt
Procedure
Wash and peel the cucumber leaving with green stripes and cut them half lengthwise and remove the seeds.
Also, wash other ingredients and squeeze any excess moisture and place them in a double layer paper towel. Season it with stevia, salt, and vinegar in a dish and mix. Add cucumbers and sesame seeds and mix them well.
